I am sure that most of us have Irish Heritage (If only in our wishes!)
I have two 5# corned beefs boiling soon to be converted into one of the greatest dishes on earth (It is in the Landess World Famous Cookbook... now out of print). Just a friendly Irish hint.. after the boiling, place in a baking dish and cover with a sauce of pineapple juice, dark brown sugar, and ground cloves. Bake at 350 30-45 minutes, basting often. Serve with honey mustard and all the other goodies.
I am sure that Rex can make several recommendations as to libations!
